I've worked for years in Reality tv as a production assistant and now an associate producer. I've spent a lot of time in the field as well as in post.
Things are edited more than you'd imagine. I'll search through hours and hours of footage for a sentence to fit our need.
There's a term called a frankenbite where you take two sentences and splice them together. It's usually his by showing the other person in conversation or a b roll shot.
All shows and production companies are different so I can only speak for my experiences.
