#9 Rosemary Garlic Buttered Potatoes

Ingredients: 3 pounds baby red potatoes 2 tablespoons olive oil 4 crushed garlic cloves 1/4 cup minced fresh rosemary or to taste 2 to 4 tablespoons butter Salt and freshly ground black pepper to taste Directions: Scrub the potatoes and, for a decorative look if you like, remove a thin strip of peel from around the centers. Cook the potatoes in a large pot of boiling salted water until tender, about 20 minutes. Do not overcook. Drain well, then return the potatoes to the pot. Place over medium-high heat and add the olive oil, garlic and rosemary. Cook, stirring constantly, until the potatoes are a light golden brown and the garlic is fragrant, about 5 minutes. Be careful not to overcook or burn the garlic. Add 2 tablespoons butter and season to taste with salt and pepper. Add additional butter if potatoes seem too dry or for a richer flavor. Serve hot.
